Flanksteak mit Tee-Rub

Das Flanksteak, oder Bavette, findet man immer öfter an der gut sortierten Fleischtheke. Das duftende Aroma von Lazy Daze in der Marinade sorgt dabei für ein intensives Geschmackserlebnis.

Ingredients

500 g Flanksteak / Bavette (alternativ: Filet vom Rind, Roastbeef)

4 Teaspoon(s) Lazy Daze

1 Teaspoon(s) Piment

2 Nelken

1 Teaspoon(s) Holunderbeere

2 Teaspoon(s) schwarzer Pfeffer

Preparation

Cooking time: 20 min

1. Das Fleisch ggf. von Fett und Sehnen befreien.

2. Den Tee zusammen mit den Gewürzen in einer Pfanne trocken anrösten. Danach im Mörser oder Blitzhacker zu einem feinen Pulver verarbeiten.

3. Das Fleisch salzen und die Tee-Gewürzmischung einmassieren. Möglichst fest in Folie einwickeln und am besten über Nacht marinieren lassen.

4. Den Ofen auf 180 Grad Ober/Unterhitze vorheizen. Das Steak kurz von beiden Seiten in etwas Öl oder Butterschmalz anbraten, dabei aber aufpassen, dass die Marinade nicht verbrennt. In Alufolie wickeln und im Ofen ca. 10-15 Minuten gar ziehen lassen. Die Garzeit hängt dabei von der Größe des Steaks und dem gewünschten Gargrad ab. Das prüft man am besten mit einem Fleischthermometer oder ansonsten mit der Druckprobe: Lässt sich das Fleisch noch ganz leicht eindrücken, ist es medium rare. Gibt es nur noch ein wenig nach ist es medium.

Das Ganze geht natürlich auch hervorragend auf dem Grill!
