Tee-Lachs mit Orangen-Fenchelgemüse

Auch wenn der Seelachs klassischerweise nicht zu den Edelfischen zählt, so wird er, im Zusammenspiel mit aromatischem Lazy Daze Tee, zu einem echten Tee-Lachs. Für die sizilianische Note sorgt frisch-fruchtiges Orangen-Fenchelgemüse.

Ingredients

400 g Seelachs Filet

100 ml Lazy Daze

2 Bio-Orangen

1 Schalotte

1 Fenchel

1 Teaspoon(s) Fenchelsaat

1 Tablespoon(s) Geröstete Pinienkerne

2 cl Sahne oder Creme Fraiche

1 Tablespoon(s) Olivenöl

Preparation

Cooking time: 30 min

1. 3-4 TL Lazy Daze mit 100 ml heißem Wasser aufgießen und abkühlen lassen Fischfilet portionieren und mit dem Tee in einen dichten Beutel geben. Mindestens 2 Stunden besser noch über Nacht marinieren.

2. Schalotte fein hacken. Den Fenchel waschen, in der Mitte teilen und den Strunk herausschneiden. Das Fenchelgrün aufbewahren.

3. Von beiden Orangen die Schale abreiben. Eine Orange auspressen und die Andere filetieren.

4. In einer Pfanne mit Deckel die Schalotte im Öl anschwitzen. Den Fenchel und die Fenchelsaat dazugeben und ein paar Minuten mitdünsten lassen.

5. Fisch aus der Marinade nehmen und die Marinade aufbewahren.

6. Gemüse mit Tee-Marinade, Orangenabrieb- und Saft ablöschen.

7. Fisch auf das Gemüse legen, den Deckel schließen und, je nach Stärke des Filets, weitere 5-10 Minuten dünsten.

8. Fisch aus der Pfanne nehmen und warm halten.

9. Gemüse mit etwas Sahne oder Creme Fraiche binden. Mit Pfeffer, Salz und einem Spritzer Zitrone abschmecken.
