Falafel with yoghurt dip
Chickpeas are real protein bombs and therefore perfect for a meat-free diet. And when they are served as falafel with a delicate tea flavour and a fresh yoghurt dip, everyone else is happy to join in.

For the dip:

fresh turmeric (alternatively 1/2 teaspoon ground turmeric)

Preparation
Preparation for 2 portions
1. Add 5 teaspoons of Business Trip to 500ml lukewarm water and leave to infuse for 30 minutes. Strain through a sieve into a bowl.
Use the tea as normal. Add the chickpeas to the bowl and leave to soak overnight
The longer they soak, the more tea flavour they absorb and the shorter the cooking time.
2. drain the chickpeas, place in a pan and fill with water. Depending on the soaking time, simmer for approx. 60 minutes. When they can be easily mashed with a fork, they are cooked.
3. Meanwhile, for the dip, place the yoghurt in a bowl. Add the zest and juice of the lemon, grated ginger and turmeric, honey and chopped coriander leaves and mix well. Season to taste with salt and pepper and leave to infuse in the fridge. Caution - if using fresh turmeric, use disposable gloves and rinse all surfaces and utensils well immediately. Turmeric colours intensely!
4. Dry roast the cumin and coriander seeds in a pan. Grind together with 1 teaspoon of business trip and the remaining spices in a mortar or spice grinder to a powder. Place the cooked chickpeas in a pan and puree with the egg, 1 tbsp olive oil and the spice mixture. Flavour with salt and pepper if necessary, form small balls with slightly moistened hands and flatten slightly. Fry in a pan with the remaining olive oil until crispy. Place on some kitchen paper.
5. serve with the dip and a glass of Business Trip.
